Ingredients

  • 2 fish fillets (about 180g each), skin on
  • 2 tbsp cooking oil
  • ¾ tsp salt
  • ¼ tsp black pepper

Preparation

  1. Pat the skin very dry with tissue.
  2. Sprinkle salt and pepper on both sides.
  3. Put a non-stick pan on medium-high heat. Add oil and wait for tiny smoke.
  4. Place fish skin-side down and press gently for 10 seconds.
  5. Cook 2–3 minutes until skin is golden and crispy.
  6. Finish cooking:
    • Thick fillets: Oven 200°C for 10 minutes.
    • Thin fillets: Flip and cook flesh side 1 minute.
  7. Rest 3 minutes, skin-side up.
  8. Serve skin-side up to keep crispy.
